delicious chocolate brownies

Chocolate brownies with that perfect brownie crust!
So good, we only caught the crumbs....

INGREDIENTS:
200g dark chocolate
125g butter
4 X-large or jumbo eggs
1 1/2 cups castor sugar
1 tsp vanilla extract
1 cup flour
2 Tbs cocoa
1/2 tsp baking powder
100g walnuts or pecan nuts (optional)

Preheat oven to 180ÂșC
Melt the chocolate in a bowl over hot water on the stove..... we initially nuked the chocolate
and ended up with a kitchen full of billowing smoke... and had to run to the shop for more
chocolate. Thank goodness Woolies has a special on chocolate bars this week.

Beat softened butter into the melted chocolate and allow to cool.

Beat the eggs and sugar until light and fluffy.

Add vanilla extract (that's the real stuff, not the essence and worth the extra pennies.)

Sift dry ingredients, folding into the egg mixture with melted chocolate and nuts.
Do not overmix.

Pour into greased baking dish and bake for 20 minutes.

Lick bowls and spoons clean.

Leave to cool tin, and then cut into blocks.
